The distillery’s signature brand, Hounen (meaning “bountiful harvest”), was named to express a wish for abundance when the business shifted from selling awamori by weight to selling it in bottles. Carefully Crafted Brewing Process
Tokuyama’s awamori is made using koji rice cultivated with black koji mold and brewed with mineral-rich underground water. Thanks to this careful process, the moromi (fermenting mash) is distilled slowly under atmospheric pressure at just the right moment when it produces a fruity aroma. The result is a well-balanced, mellow flavor that’s easy to enjoy—even for those new to awamori.
